- For the banana syrup:
- 1 cup water
- 1 overripe banana, mashed
- 3/4 cup brown sugar, packed
- 1/4 cup granulated sugar
- 2 cinnamon sticks
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1 tsp vanilla extract
- For each latte:
- 2 tbsp banana bread syrup
- 1 shot espresso (or 1/4 cup strong brewed coffee)
- 3/4 cup milk of choice (whole milk, oat milk, or almond milk)
- Ice (for iced version)
Instructions
- 1. In a medium saucepan, combine the water, mashed banana, brown sugar, granulated sugar, cinnamon sticks, nutmeg, and salt. Stir together and bring to a simmer over medium heat.
- 2. Once simmering, reduce heat to low and simmer gently for 5 minutes, stirring occasionally to dissolve the sugar and infuse the flavors.
- 3. Remove from heat and let cool for 15 minutes. Strain the syrup through a fine-mesh sieve into a jar or syrup bottle, discarding the solids. Stir in the vanilla extract. Store refrigerated for up to 2 weeks.
- 4. To make a latte, add 2 tablespoons of banana bread syrup to a mug or glass. Brew a shot of espresso or strong coffee and pour it over the syrup, stirring to combine.
- 5. Steam or froth the milk until warm and creamy (or use cold milk for an iced version). Pour the milk over the espresso and syrup. For an iced latte, fill the glass with ice before adding the milk.
