Viral Pizza Beans

The fiber-rich weeknight dinner that TikTok cannot get enough of in 2026. Creamy cannellini beans simmered in marinara sauce with crispy pepperoni, melted mozzarella, and pepperoncini, all piled onto garlic-rubbed sourdough toast. It has all the appeal of pizza but comes together in one pan in 15 minutes for under $10.

Ingredients

  • 8 slices sourdough bread
  • 2 tbsp olive oil, divided
  • 2 large cloves garlic (1 whole, 1 finely chopped)
  • 1/4 cup grated Parmesan, plus more for serving
  • 1 oz pepperoni, halved
  • 1 (15 oz) can cannellini beans, rinsed
  • 1 cup jarred marinara sauce
  • 4 pepperoncini, thinly sliced, plus 1 tbsp brine
  • 1/4 cup fresh basil leaves, chopped
  • 2 tbsp chopped flat-leaf parsley
  • 6 oz whole-milk mozzarella, coarsely shredded

Instructions

  1. 1. Heat the broiler. Place bread on a baking sheet and brush both sides with 1 tbsp olive oil. Broil, flipping once, until golden brown on both sides, 3 to 4 minutes.
  2. 2. Immediately rub the toasted bread with the whole garlic clove. Return to the baking sheet and sprinkle with Parmesan.
  3. 3. Heat the remaining 1 tbsp olive oil in a medium oven-safe skillet over medium heat. Add pepperoni and cook until it begins to crisp, 1 to 2 minutes. Transfer to a plate with a slotted spoon, leaving the oil in the skillet.
  4. 4. Add chopped garlic and cannellini beans to the skillet and cook, stirring, for 1 minute.
  5. 5. Add marinara sauce and cook until heated through, about 2 minutes. Remove from heat and stir in pepperoncini brine, then fold in basil and parsley.
  6. 6. Spoon the bean mixture over the toast and top with pepperoni and mozzarella.
  7. 7. Broil until cheese is melted, 1 to 2 minutes. Top with sliced pepperoncini and additional Parmesan and basil. Serve immediately.
