Instant Pot Chicken Enchilada Rice

A Mexican-inspired one-pot meal with chicken, rice, black beans, corn, and enchilada sauce topped with melted cheese.

Ingredients

  • 1.5 lbs boneless skinless chicken breast, sliced into strips
  • 1 oz taco seasoning
  • 1/2 white onion, diced
  • 3 garlic cloves, minced
  • 1/2 green bell pepper, diced
  • 1/2 red bell pepper, diced
  • 1 (12 oz) can black beans
  • 1 (12 oz) can corn
  • 1.5 cups chicken stock
  • 3 cups medium grain white rice, rinsed
  • 1 cup enchilada sauce
  • 1 tsp salt
  • 1/2 cup shredded Mexican cheese
  • 3 tbsp olive oil
  • 1 lime

Instructions

  1. Season chicken with taco seasoning. Set Instant Pot to Saute for 20 minutes.
  2. Add olive oil, onion, and garlic. Saute until translucent, 5 minutes. Add seasoned chicken and brown, 5-7 minutes.
  3. Add bell peppers and saute 2-3 minutes.
  4. Add rice, beans, corn, enchilada sauce, salt, and chicken stock. Stir to combine.
  5. Cook on Rice function for 20 minutes. Allow natural release.
  6. Open lid, sprinkle cheese and oregano on top. Close lid for 5 minutes to melt cheese. Serve with lime wedges.
