- 2 baby bok choy, halved lengthwise
- 2 scallions, sliced
- 1 tbsp sesame oil

Instructions
- 1. Heat vegetable oil in a large pot over medium heat. Add minced garlic and grated ginger, cooking until fragrant, about 1 minute.
- 2. Add the red curry paste and stir for 30 seconds until it blooms and becomes aromatic.
- 3. Pour in the coconut milk and vegetable broth, whisking to combine the curry paste thoroughly.
