Ingredients

  • 1 lb carrots, peeled and cut into 3-inch batons
  • 2 tbsp unsalted butter
  • 2 tbsp honey
  • 1/2 cup vegetable broth
  • 1 sprig fresh thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp lemon juice
  • Fresh thyme leaves, for garnish

Instructions

  1. 1. In a large skillet with a lid, combine the carrots, broth, thyme sprig, salt, and pepper. Bring to a simmer over medium heat.
  2. 2. Cover and cook for 15 to 20 minutes, stirring occasionally, until the carrots are tender and the liquid has mostly evaporated.
  3. 3. Remove the lid and discard the thyme sprig. Add the butter and honey to the skillet.
  4. 4. Continue cooking over medium heat for 5 to 7 minutes, tossing the carrots frequently, until the butter and honey reduce to a glossy glaze that coats each carrot.
