Sushi Bake

The viral TikTok casserole that deconstructs sushi into an easy, crowd-pleasing bake. A bed of seasoned sushi rice is topped with spicy chopped crab or salmon, baked until bubbly, then served with nori sheets for DIY assembly. Ingredients

  • For the rice:
  • 3 cups short-grain sushi rice
  • 3 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • For the topping:
  • 1 lb imitation crab sticks (or cooked salmon, flaked)
  • 1 cup Kewpie mayonnaise
  • 3 tbsp sriracha
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1/2 cup cream cheese, softened
  • 2 tbsp furikake seasoning
  • For serving:
  • 10 nori sheets, cut into quarters
  • 1 ripe avocado, sliced
  • 1/2 cup cucumber, julienned
  • Extra Kewpie mayonnaise and sriracha for drizzling
  • Soy sauce for dipping
  • Pickled ginger and wasabi

Instructions

  1. 1. Rinse sushi rice under cold water until the water runs clear, about 4-5 rinses. Drain well.
  2. 2. Combine rice and water in a rice cooker or pot. Cook until tender, about 20 minutes. Let rest covered for 10 minutes.
  3. 3. In a small bowl, microwave rice vinegar, sugar, and salt for 15 seconds until dissolved. Gently fold into the cooked rice and let cool to room temperature.
  4. 4. Preheat oven to 375 degrees F. Grease a 9x13 inch baking dish.
  5. 5. Spread the seasoned rice evenly in the baking dish, pressing down gently. Sprinkle with furikake seasoning.
  6. 6. In a bowl, chop the crab sticks (or flake salmon) into small pieces. Mix with cream cheese, Kewpie mayonnaise, sriracha, soy sauce, and sesame oil until well combined.
  7. 7. Spread the crab mixture evenly over the rice layer.
  8. 8. Bake for 15-20 minutes until the top is bubbly and lightly golden in spots.
  9. 9. Remove from oven and let rest for 5 minutes.
  10. 10. Serve by scooping a portion onto a quarter sheet of nori, topping with avocado and cucumber, drizzling with spicy mayo, and folding into a hand roll.
