Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup unsweetened cocoa powder
  • 1/2 tsp salt
  • 1 cup all-purpose flour
  • 1 cup dark chocolate chips
  • For the pistachio layer:
  • 1 cup shelled pistachios, finely ground
  • 1/3 cup tahini paste
  • 1/4 cup sweetened condensed milk
  • 2 tbsp powdered sugar
  • 1 tbsp coconut oil
  • 1/2 tsp cardamom
  • Pinch of sea salt
  • For the topping:
  • 1/2 cup dark chocolate, melted
  • 2 tbsp chopped pistachios
  • Flaky sea salt

Instructions

  1. 1. Preheat oven to 350 degrees F. Line a 9x13 inch baking pan with parchment paper.
  2. 2. In a large bowl, whisk melted butter and sugar until smooth. Beat in eggs one at a time, then stir in vanilla.
  3. 3. Sift in cocoa powder, flour, and salt. Fold gently until just combined. Fold in chocolate chips.
  4. 4. Pour half the brownie batter into the prepared pan and spread evenly.
  5. 5. In a separate bowl, mix the ground pistachios, tahini, condensed milk, powdered sugar, coconut oil, cardamom, and sea salt until a smooth paste forms.
  6. 6. Spread the pistachio-tahini layer evenly over the brownie batter in the pan.
  7. 7. Dollop the remaining brownie batter on top and spread carefully to cover the pistachio layer.
  8. 8. Bake for 35-40 minutes until a toothpick inserted comes out with moist crumbs but not wet batter.
