The unofficial cocktail of West Texas. A minimalist highball — blanco tequila, fresh lime, and Topo Chico mineral water. Crisp, mineral, and incredibly refreshing. The simplest tequila cocktail there is, and arguably the best for hot weather.

Ingredients
- 2 oz blanco tequila
- 1/2 oz fresh lime juice
- 4-6 oz Topo Chico mineral water (or any sparkling mineral water)
- Lime wedge for garnish
Instructions
- 1. Fill a Collins glass with ice.
- 2. Add tequila and lime juice.
- 3. Top with cold Topo Chico.
- 4. Stir gently once.
- 5. Garnish with a lime wedge. No salt rim — this one stays clean.
