Tom Collins

A tall, refreshing gin lemonade with soda — essentially a sparkling gin sour. Dating back to the 1800s and named after a famous practical joke. Light, fizzy, and perfect for summer afternoons. Use Old Tom gin for historical accuracy, or London dry for a crisper version.

Ingredients

  • 2 oz gin (Old Tom or London dry)
  • 1 oz fresh lemon juice
  • 1/2 oz simple syrup
  • 3-4 oz club soda, chilled
  • Lemon wheel and maraschino cherry for garnish

Instructions

  1. 1. Add gin, lemon juice, and simple syrup to a shaker with ice.
  2. 2. Shake for 15 seconds.
  3. 3. Strain into a Collins glass filled with ice.
  4. 4. Top with club soda and stir gently.
  5. 5. Garnish with a lemon wheel and cherry.
