Gin Fizz
A bright, bubbly gin cocktail — gin, lemon, sugar, and soda water. Light, refreshing, and deceptively simple. The egg white version adds a silky texture and foamy top. A classic from the late 1800s that pre-dates the Tom Collins.

Ingredients
- 2 oz gin
- 3/4 oz fresh lemon juice
- 1/2 oz simple syrup
- 1/2 oz egg white (optional, for foam)
- 2 oz club soda, chilled
- Lemon wheel for garnish
Instructions
- 1. If using egg white: dry shake all ingredients (no ice) for 15 seconds.
- 2. Add ice and shake hard for 15 seconds.
- 3. Strain into a highball glass (no ice).
- 4. Top with club soda and let foam rise.
- 5. Garnish with a lemon wheel.
- WITHOUT EGG WHITE: Shake gin, lemon, and syrup with ice. Strain into a highball glass with fresh ice. Top with soda.
