Ramos Gin Fizz
The legendary New Orleans cocktail invented in 1888 — gin, lemon, lime, sugar, cream, egg white, orange flower water, and soda. Requires extended shaking (traditionally 2+ minutes) to create the signature cloud-like foam. The ultimate test of a bartender's endurance.

Ingredients
- 2 oz gin (Old Tom preferred)
- 3/4 oz fresh lemon juice
- 3/4 oz fresh lime juice
- 1/2 oz simple syrup
- 1/2 oz heavy cream
- 1 egg white
- 1 drop orange flower water
- 1-2 oz club soda, chilled
Instructions
- 1. Add all ingredients except club soda to a shaker (no ice).
- 2. Dry shake vigorously for 15 seconds to emulsify.
- 3. Add ice and shake HARD for at least 60 seconds (traditionally 2+ minutes).
- 4. Strain into a chilled highball glass (no ice).
- 5. Top slowly with club soda.
- 6. Let the foam rise for 1-2 minutes before serving.
