Instant Pot Beef Stew

Tender beef chunks with potatoes, carrots, and a rich savory broth. Classic comfort food ready in under an hour.

Ingredients

  • 2 lbs beef chuck roast, cut into 1.5-inch cubes
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1/2 cup dry red wine
  • 3 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tsp dried thyme
  • 2 bay leaves
  • 1.5 lbs Yukon Gold potatoes, cut into chunks
  • 4 large carrots, peeled and sliced
  • 1 cup frozen peas
  • 2 tbsp cornstarch
  • 2 tbsp cold water

Instructions

  1. Season beef with salt and pepper. Set Instant Pot to Saute, add oil, and sear beef in batches until browned. Remove and set aside.
  2. Add onion to the pot and cook 4 minutes. Add garlic and tomato paste, cook 1 minute. Pour in wine to deglaze, scraping up browned bits.
  3. Add beef broth, Worcestershire sauce, thyme, and bay leaves. Return beef to pot. Add potatoes and carrots.
  4. Secure lid, set valve to Sealing, and pressure cook on High for 35 minutes.
  5. Allow natural release for 10 minutes, then quick release remaining pressure.
  6. Set to Saute. Mix cornstarch with cold water and stir in to thicken. Add frozen peas and stir until heated through. Discard bay leaves and serve.
