Garlic Parmesan Dipped Burgers

An indulgent viral TikTok burger where smashed cheeseburger halves are dunked face-down into a pool of garlicky parmesan cream sauce, with fries on the side to mop up every drop. The trick, per creator @foodieholly_, is cooking everything in one pan so the sauce soaks up all the caramelized bits.

Ingredients

  • 1 lb (454g) ground beef (80/20), divided into 4 balls
  • 4 slices American or cheddar cheese
  • 2 brioche buns, split and toasted
  • 4 strips bacon, cooked crisp and chopped
  • 1 large yellow onion, thinly sliced
  • 1 Tbsp olive oil, plus more as needed
  • 1 Tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/3 cup freshly grated parmesan cheese
  • 1/2 tsp Italian seasoning or dried oregano
  • Salt and black pepper to taste
  • Crinkle-cut fries, for serving
  • Fresh parsley, chopped for garnish

Instructions

  1. 1. Heat olive oil in a large skillet over medium heat. Add the sliced onions with a pinch of salt and cook, stirring often, until deeply caramelized and golden, about 15-20 minutes. Push to the side of the pan.
  2. 2. Increase heat to medium-high. Place the beef balls in the pan and smash each flat with a spatula; season with salt and pepper. Sear until a crust forms, about 2 minutes, then flip, top each with a cheese slice, and cook until just melted, another 1-2 minutes.
  3. 3. Toast the brioche buns cut-side down in the same pan until golden. Set the patties and buns aside; keep the bacon nearby.
  4. 4. Lower heat to medium and add the butter to the pan. Saute the minced garlic until fragrant, about 30 seconds, scraping up all the caramelized bits.
  5. 5. Pour in the heavy cream and bring to a gentle simmer. Whisk in the parmesan and Italian seasoning; season with salt and pepper. Simmer 2-3 minutes until slightly thickened.
  6. 6. Build the burgers: bottom bun, bacon, patty, caramelized onions, top bun. Cut each burger in half.
  7. 7. Spoon a pool of the garlic parmesan sauce onto a deep plate. Place each burger half cut-side down in the sauce. Serve with fries alongside for dipping, garnished with parsley.
