Bellini

Invented at Harry's Bar in Venice in 1948 by Giuseppe Cipriani. White peach puree and Prosecco — simple, elegant, and the brunch cocktail of choice. Named after a Renaissance painter whose work Cipriani admired.

Ingredients

  • 2 oz white peach puree (or peach nectar)
  • 4 oz Prosecco (chilled)
  • White peach slice for garnish

Instructions

  1. 1. Chill a flute glass.
  2. 2. Add peach puree to the glass.
  3. 3. Slowly pour Prosecco while stirring gently to combine.
  4. 4. Garnish with a peach slice.
