- 1 1/2 cups granulated sugar, divided
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup ube halaya (ube jam) or 1 tsp ube extract
- 1/2 cup powdered sugar (for rolling)
Instructions
- 1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- 2. In a large bowl, beat the softened butter and 1 cup of granulated sugar with an electric mixer until light and fluffy, about 3 minutes.
- 3. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract and ube halaya (or ube extract) until fully incorporated and the dough is a uniform purple color.
- 4. Gradually add the dry ingredients to the wet mixture, mixing on low speed just until combined. Do not overmix.
- 5. Cover the bowl and chill the dough in the refrigerator for at least 2 hours, or until firm enough to roll.
- 6. Preheat the oven to 350 degrees F (175 C). Line two baking sheets with parchment paper.
- 7. Place the powdered sugar in a shallow bowl. Place the remaining 1/2 cup granulated sugar in another shallow bowl.
- 8. Scoop tablespoon-sized portions of dough, roll into balls, then roll each ball first in granulated sugar and then generously in powdered sugar.
- 9. Place on the prepared baking sheets 2 inches apart. Bake for 12-14 minutes, until the edges are set but the centers are still soft.
- 10. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. The cookies will develop their characteristic crackly crust as they cool.
