Instant Pot Beef Bourguignon

A French-inspired stew with beef, bacon, mushrooms, and red wine. Rich, deep flavors in a fraction of the traditional time.

Ingredients

  • 2 lbs beef chuck roast, cut into 2-inch cubes
  • 4 oz bacon, cut into lardons
  • 1 tbsp butter
  • 1 lb pearl onions, peeled
  • 8 oz cremini mushrooms, quartered
  • 3 cloves garlic, minced
  • 2 tbsp flour
  • 2 cups dry red wine (Pinot Noir)
  • 2 cups beef stock
  • 2 tbsp tomato paste
  • 3 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper

Instructions

  1. Set Instant Pot to Saute. Cook bacon until crisp, about 5-7 minutes. Remove and set aside.
  2. Add butter and sear beef in batches until deeply browned on all sides. Remove and set aside.
  3. Add pearl onions and mushrooms. Cook until softened, about 5 minutes. Add garlic and cook 1 minute.
  4. Sprinkle flour over the vegetables and stir for 1 minute. Pour in red wine to deglaze, scraping up browned bits.
  5. Whisk in beef stock and tomato paste. Return beef and bacon to pot. Add thyme and bay leaves.
  6. Secure lid, set valve to Sealing, and pressure cook on High for 45 minutes.
  7. Allow natural release for 15 minutes. Serve over mashed potatoes or with crusty bread.
