Whole30 Garlic Pulled Pork

Budget-friendly pork shoulder slow-cooked with garlic until fall-apart tender. Perfect for Whole30 taco bowls, salads, or lettuce wraps.

Ingredients

  • 3-4 lb pork shoulder roast
  • 1 tbsp olive oil
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1/2 tsp cumin
  • 6 cloves garlic, smashed
  • 1 cup chicken broth
  • 2 tbsp apple cider vinegar

Instructions

  1. Season pork shoulder with salt, pepper, garlic powder, smoked paprika, onion powder, and cumin.
  2. Set Instant Pot to Saute. Add olive oil and sear pork on all sides until browned, about 3 minutes per side.
  3. Add smashed garlic, chicken broth, and apple cider vinegar to the pot.
  4. Secure lid, set valve to Sealing, and pressure cook on High for 60 minutes.
  5. Allow natural release for 15 minutes. Shred pork with two forks, mixing with the cooking liquid.
  6. Serve in lettuce wraps, over cauliflower rice, or in Whole30 taco bowls.
