Instant Pot Beef and Broccoli

Better-than-takeout beef and broccoli with tender flank steak in a glossy soy-ginger sauce.

Ingredients

  • 1.5 lbs flank steak, thinly sliced against the grain
  • 2 tbsp cornstarch
  • 2 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup beef broth
  • 1/2 cup soy sauce
  • 1/4 cup honey or brown sugar
  • 2 tbsp rice vinegar
  • 4 cups broccoli florets
  • Sesame seeds and green onions for garnish

Instructions

  1. Toss sliced beef with cornstarch until coated. Set Instant Pot to Saute, add oil, and sear beef in batches for 1-2 minutes per side. Remove and set aside.
  2. Add garlic and ginger to the pot, cook 30 seconds. Pour in beef broth to deglaze.
  3. Add soy sauce, honey, and rice vinegar. Stir to combine. Return beef to pot.
  4. Secure lid, set valve to Sealing, and pressure cook on High for 5 minutes.
  5. Quick release. Set to Saute, add broccoli florets, and cook 3-4 minutes until crisp-tender.
  6. Garnish with sesame seeds and green onions. Serve over rice.
