Marry Me Chicken

Ingredients

  • 4 boneless skinless chicken breasts (2 to 2.5 lbs)
  • 1.5 tsp kosher salt, divided
  • 2 tbsp olive oil, divided
  • 1 tbsp oil from sun-dried tomatoes
  • 3 cloves garlic, minced
  • 1/4 tsp red pepper flakes
  • 1 tbsp tomato paste
  • 1/2 cup drained oil-packed sun-dried tomatoes, chopped
  • 1/2 cup low-sodium chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 sprigs fresh basil, chopped
  • Fresh thyme sprigs

Instructions

  1. 1. Season chicken breasts with 1 tsp salt. Heat 2 tbsp olive oil in a large ovenproof skillet over medium-high heat.
  2. 2. Sear chicken 5-7 minutes per side until golden brown. Transfer to a plate.
  3. 3. Reduce heat to medium. Add sun-dried tomato oil, garlic, thyme, and red pepper flakes. Cook 1 minute until fragrant.
  4. 4. Stir in tomato paste, then add chicken broth, heavy cream, and sun-dried tomatoes. Simmer 3-4 minutes until slightly thickened.
  5. 5. Stir in Parmesan cheese until melted. Return chicken to skillet.
  6. 6. Transfer skillet to 375 degrees F oven and bake 15-20 minutes until chicken is cooked through (165 degrees F internal).
  7. 7. Transfer chicken to plates. Spoon sauce over top and garnish with fresh basil. Serve over pasta, rice, or with crusty bread.
