Lasagna Soup

Ingredients
- 2 tbsp olive oil
- 1 lb ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 can (28 oz) crushed tomatoes
- 4 cups beef broth
- 2 tsp Italian seasoning
- Salt and black pepper to taste
- 8 lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 2 tbsp fresh basil or parsley, chopped
Instructions
- 1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
- 2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess fat.
- 3. Add onion and garlic. Saute until softened and fragrant, about 4 minutes.
- 4. Stir in tomato paste, crushed tomatoes, beef broth, Italian seasoning, salt, and pepper. Bring to a simmer.
- 5. Add broken lasagna noodles and cook until tender, about 10-12 minutes.
- 6. Taste and adjust seasoning. Stir in a handful of mozzarella for extra richness.
- 7. Ladle into bowls and top with a dollop of ricotta, shredded mozzarella, Parmesan, and fresh basil.
- 8. Optional: For leftovers, cook pasta separately to prevent sogginess.
