Serves1
Ingredients
- 2 tbsp pumpkin puree (canned is fine)
- 2 tbsp sugar (or maple syrup)
- 1 tsp pumpkin pie spice (or: 1/2 tsp cinnamon, 1/4 tsp nutmeg, pinch ginger, pinch cloves)
- 1 shot espresso (or 1/2 cup strong brewed coffee)
- 1 cup milk (any kind — whole milk, oat milk, or almond milk work great)
- Whipped cream (for topping)
- Extra pumpkin pie spice or cinnamon (for dusting)
Instructions
- 1. In a small saucepan, combine pumpkin puree, sugar, and pumpkin pie spice. Cook over medium heat for 2 minutes, stirring constantly. This cooks the raw flavor out of the pumpkin and toast the spices.
- 2. Add milk and heat until steaming but not boiling (about 150-160 degrees F), whisking to combine.
- 3. Remove from heat. Use a milk frother, whisk, or immersion blender to froth the milk until foamy.
- 4. Brew your espresso or strong coffee.
- 5. Pour espresso into a mug. Add the pumpkin milk mixture on top, holding back the foam with a spoon.
- 6. Spoon the foam on top.
- 7. Top with whipped cream and a dusting of pumpkin pie spice or cinnamon.
- 8. For a larger batch: multiply the pumpkin mixture by 4 and keep warm on the stove — guests can ladle it over their own coffee.
