Ingredients

  • 1-1/2 cups graham cracker crumbs (about 10-12 sheets)
  • 1/4 cup granulated sugar (for crust)
  • 1/2 cup unsalted butter, melted
  • 3 large eggs, room temperature (separated)
  • 1 can (14 ounces) sweetened condensed milk
  • 1/2 cup freshly squeezed lemon juice (about 2 large lemons)
  • 2 teaspoons lemon zest
  • 1/4 teaspoon cream of tartar
  • 1/4 cup granulated sugar (for meringue)

Instructions

  1. 1. Preheat the oven to 325 degrees F.
  2. 2. In a small bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter until every crumb is coated. Press the mixture firmly into the bottom and up the sides of an 8-inch pie pan.
  3. 3. Separate the eggs: place yolks in a medium bowl and whites in a large bowl.
  4. 4. To the yolks, add sweetened condensed milk, lemon juice, and lemon zest. Stir until well combined and smooth.
  5. 5. Pour the filling into the prepared crust. Bake for 20-25 minutes, or until just set with a slight jiggle in the middle.
  6. 6. Remove the pie from the oven and increase the temperature to 375 degrees F.
  7. 7. To the bowl of egg whites, add cream of tartar. Beat with a hand mixer until foamy. With the mixer on low, gradually add 1/4 cup sugar and continue beating until stiff peaks form.
  8. 8. Carefully spread the meringue over the hot pie, ensuring it reaches the edges of the crust to seal it.
  9. 9. Return to the oven and bake for 10-12 minutes, or until the meringue is golden brown.
