Instant Pot Salsa Verde Chicken

Ingredients

  • 2 lbs boneless skinless chicken breasts
  • 1.5 cups salsa verde
  • 1/2 cup chicken broth
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh cilantro, chopped

Instructions

  1. Add chicken breasts to the Instant Pot. Pour salsa verde and chicken broth over the top.
  2. Sprinkle with cumin, garlic powder, onion powder, salt, and pepper.
  3. Secure lid, set valve to Sealing, and pressure cook on High for 15 minutes.
  4. Quick release. Shred chicken directly in the pot with two forks, mixing with the sauce.
  5. Garnish with fresh cilantro. Serve in tacos, burrito bowls, or over rice.
